Recipe of the week:

Great recipes to spice up your night!

Buffalo Chicken Meatloaf: (very easy dish!)

2/3 C. old-fashioned Oats
1/2 C. Fat free milk
2 1/2 tblspns. buffalo wing sauce (use your favorite kind)
1 lb. lean ground chicken breast
1/2 C. chopped celery
1/4 C. shredded carrot
1/4 C. chopped sweet onion
2 large egg whites, lightly beaten (I usually just use one egg)
1/4 tspn. salt
2 oz. crumbled blue cheese (about 1/2 c.) (if you do not like blue cheese it will taste great without)

Preheat oven to 350. Combine oats and milk in bowl. Let stand 3 min. Stir in wing sauce. Add chicken, celery, carrot, onion, egg and salt. Mix ingredients. Add blue cheese. Transfer mixture to prepared pan and spread. Bake 35 to 40 min. Cut into slices.



Our girls even love this recipe:

Sweet Potato Chips: (Great way to get your veggies in your diet)

4 to 5 large weet potatoes (peeled and cut into 1/8 inch slices)
1/4 cup canola oil
2 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon taco seasoning
3/4 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (you can leave this out if you do not like your food too spicey)

Place sweet potatoes in a large bowl. Combine the oil and seasonings; drizzle over potatoes and toss to coat. Arrange potatoes in a single layer in two ungreased cookie sheets. Bake at 400 for 25-30 min. or until golden brown, turning once (if you want them crispy make sure to turn them).  You can also change ingredients to your taste whether you like it hot or not!


And for dessert!!

Cinnamon Squares: (my mother in-law loves these!)

2 8 oz. pkgs. Crescent rolls
2 8 oz. pkgs. cream cheese
1 cup sugar
1 egg
1 tbspn. vanilla
1/4 C. cinnamon and sugar mixed

Unroll first package of crecsent rolls, press into 9x13 pan. Mix together cream cheese, sugar, egg and vanilla; spread over rolls. Unroll second package of rolls and arrange over top of mixture. Sprinkle with cinn. sugar mixture. Bake at 350 for 25 minutes. Great warm or cold!
