<u><span style="font-size: large;">Summer Vegetable kabobs with homemade pesto sauce:</span></u><br />
<br />
2 eggplants, cut into chunks<br />
2 zucchini, cut into chunks<br />
2-3 bell peppers, stalks removed, seeded, and cut into chunks<br />
12-16 cherry tomatoes<br />
4 red onions, cut into quarters<br />
<br />
<u>For marinade:</u><br />
<br />
4 tblspns. olive oil<br />
freshly squeezed juice of 1/2 lemon<br />
2 garlic cloves, crushed<br />
1 tspn. salt<br />
<br />
<u>For pesto sauce:</u><br />
<br />
3-4 garlic cloves, roughly chopped <br />
leaves from a large bunch of fresh basil (30-40 leaves)<br />
1/2 tspn. sea salt<br />
2-3 tblspns. pine nuts<br />
extra virgin olive oil, as required<br />
1/4 cup freshly grated Parmesan<br />
<br />
4-6 metal skewers of 4-6 wooden skewers, soaked in water before use<br />
<br />
To make pesto sauce, use a mortar and pestle to pound the garlic with the basil leaves and salt-the salt will act as an abrasive ad help to grind. Add the pine nuts and pound them to a paste. Slowly drizzle in some olive oil and bind with grated Parmesan. Continue to pound and grind with the pestle, adding in enough oil to make a smooth sauce. Set aside.<br />
<br />
Put all the prepared vegetables in a bowl. Mix together the olive oil, lemon juice, garlic, and salt and pour it over the vegetables. Using your hands, toss the vegetables gently in the marinade, then thread them onto the skewers.<br />
<br />
Prepare the grill. Cook the kabobs for 2-3 minutes on each side, until the vegetables are nicely browned. Serve the kabobs with the pesto sauce on the side for drizzling.<br />
<br />
<br />
<u><span style="font-size: large;">Roasted sweet potato with garlic and ginger:</span></u><br />
<br />
2-3 good-size sweet potatoes, peeled and cut into chunks<br />
a thumb size piece of fresh ginger, peeled and cut into thin strips<br />
4-6 garlic cloves, smashed<br />
3-4 tblspns. olive oil<br />
sea salt and freshly ground black pepper<br />
<br />
Preheat oven to 400<br />
Place the sweet potatoes in an ovenproof dish with the ginger and garlic. Pour in the olive oil, toss well, to coat the sweet potatoes and place them in the preheated oven for about 40 min., until the sweet potato is tender and slightly caramelized. Season to taste. <br />
Serve the potato wedges as an accompaniment to kabobs or enjoy them on their own.<br />
<br />
<span style="font-size: large;"><strong>And a drink to cool off from all of the grilling:</strong></span><br />
<br />
<u><span style="font-size: large;">Cos-Mocktail Spritzer:</span></u><br />
<br />
4 limes <br />
2 medium juice oranges<br />
12 oz. (1 1/2 cup) refrigerated lemonade, divided<br />
4 oz. (1/2 cup) cranberry juice cocktail, chilled, divided<br />
crushed ice or ice cubes<br />
16 oz. (2 cups) lemon lime soda<br />
<br />
From 3 limes, squeeze 1/3 cup juice into small pitcher, thinly slice remaining lime. from oranges, squeeze 3/4 cup juice. Into pitcher with lime juice, stir in orange juice, lemonade and cranberry juice.<br />
Fill glasses with ice, then fill glasses half-full with lemonade mixture. Top with lemon lime soda and garnish with lime slices to serve.<br />

My girls and I visit our dear friends grave site a lot and they always say that the cemetery is where Jack (our friend) lives. (Which makes sense from a child's eyes) When we visited yesterday we placed the flowers in front of the headstone and one of my girls said "Jack, we picked these out for you." My other child said, as she was tapping the top of the headstone "Bye, Bye Jack Happy Memorial Day we will see you soon." How sweet to think of the innocence of kids and how special these moments are to teach our children about Veterans and Soldiers and how much they have done for us and our children's future especially on Memorial Day! <br />

<u><span style="font-size: large;">Chicken with Roasted Red Pepper Sauce:</span></u><br />

1 tspn. Canola Oil<br />
4 boneless, skinless chicken breast halves<br />
1 tspn. salt-free grilling steak seasoning blend<br />
1/2 tspn. ground cumin<br />
<br />
<u><span style="font-size: large;">Sauce:</span></u><br />
<br />
1 tblspn. Canola Oil<br />
1 c. roasted peppers<br />
1 chipotle chile pepper<br />
1/4 c. water<br />
1 tspn. cider vinegar<br />
1/4 c. fat-free sour cream (optional)<br />
2 tblspns. chopped fresh cilantro<br />

Coat large skillet with cooking spray. Add 1 tspn. canola oil and heat over medium heat. Sprinkle chicken with seasoning blend and cumin, add chicken to skillet, and cook 4 min. Turn chicken cook 3 min or until no longer pink. Remove from heat and set aside.<br />
<br />
Meanwhile, combine sauce ingredients in a blender or food processor and puree until smooth.<br />
<br />
Add pureed mixture to any pan residue in the skillet over med-high heat. Stir until blended, about 15 sec.<br />
<br />
To serve, spoon sauce onto serving plate and arrange chicken over top.<br />

<u><span style="font-size: large;">Zucchini Boats:</span></u><br />
<br />
2 med. zucchini, halved lengthwise<br />
1 tblspn. canola oil, divided<br />
1 c. finely chopped onions<br />
1/2 tspn. dried oregano leaves<br />
1/2 c. panko bread crumbs, divided<br />
1 egg white<br />
1/2 tspn. paprika<br />
1/2 tspn. salt<br />
1/8 tspn. cayenne pepper<br />

Preheat oven to 375. Line baking sheet with foil.<br />
Using 1 tspn. canola oil in a large skillet over med-high heat. Add chopped zucchini, onions, and oregano and cook 4 min. or until mixture begins to lightly brown, stirring frequently. Remove from heat.<br />

Meanwhile, combine 1/4 c. bread crumbs with egg white, paprika, salt and cayenne pepper in a small bowl. Toss to blend.<br />

Fill shells with equal amounts of squash mixture. Sprinklw with remaining bread crumbs and drizzle with 1/2 tspn. canola oil. Bake uncovered 30 min. or until golden brown.<br />

2/3 c. white whole-wheat flour<br />

1/3 c. sugar<br />
1/4 c. egg substitute<br />
3 tblspns. canola oil<br />
1 tspn. vanilla extract<br />

Topping:<br />

1/4 c. toffee bits<br />

Preheat oven to 350.<br />
Combine flour, baking powder, baking soda and salt in bowl.<br />
Combine brown sugar, sugar, egg sub., canola oil, and vanilla in bowl. Cream together until smooth.<br />

<strong>Please read all of this post, do not jump into checking your childs credit it is not recommended until age 16. This is just information for those of you who have children and resources for those of you who have had this horrible crime done to your children.</strong><br />
<br />
The issue for parents is this: What can I do to protect my child?<br />
<br />
While the problem is clear, the solution is less so. The vast majority of kids don't have a credit report, and they shouldn't. In general, the Federal Trade Commission, the nonprofit Identity Theft Resource Center and the nation's credit bureaus advise against frequently checking your kids' credit unless there's some reason to believe they've been victimized by identity theft. Repeated requests for a child's report can actually do more harm than good. The Identity Theft Resource Center warns that it can lead to the premature creation of a credit file, which could make it easier for an ID thief to exploit the child’s identity.<br />
Still, it's understandable that parents might want to check on their kids identities occasionally, particularly after hearing TODAY's story. So here are a few helpful resources.<br />
<strong>Getting a child credit report is different </strong>Standard advice for getting a credit report doesn't apply to children — kids' reports cannot be obtained using the congressionally mandated free credit report website, <a href="http://annualcreditreport.com/"><span style="color: #336699;">http://AnnualCreditReport.com</span></a>. <strong>(which you should check your credit every year)</strong> Requests for information on a juvenile from the site will be immediately rejected. There are legal reasons for this, according to Susan Henson of Experian, one of three major credit reporting bureaus — the Children's Online Protection Act restricts the collection of information about kids under 13 years old. Also, information about a third party can only be disclosed after the requester provides proof of legal guardianship, and that can't be provided through the website. So all three bureaus require direct contact to get kids' credit reports.<br />
<strong>First stop: Trans Union </strong><br />
Trans Union has the most parent-friendly process, with the only online application specifically for child inquiries, so that bureau is the best place to start. <a href="http://www.transunion.com/corporate/personal/fraudIdentityTheft/fraudPrevention/childIdTheft.page"><span style="color: #336699;">Detailed instructions are included on its site.</span></a><br />

• A copy of the minor child's Social Security card<br />
• The child's full name<br />
• The child's date of birth<br />
• A list of previous address for the last two years<br />

</ol></div>Parents who use this online form will receive an initial e-mail, and then a follow-up letter, which will include a simple yes/no answer on the existence of a credit report.<br />
If Trans Union says there is no report, odds are good that your child is in the clear. But if there is a report — or you have a specific reason to believe your child is a victim — you'll want to follow up with the nation's other two major credit bureaus — Experian and Equifax — and get a report from them, too.<br />
The Identity Theft Resource Center offers a handy form that parents can use to send to any of the three bureaus. <a href="http://www.idtheftcenter.org/artman2/publish/v_templates/Letter_Form_120.shtml"><span style="color: #336699;">It can be accessed here.</span></a><br />
For children between 14 to 18 years old, the process is different — if they have a report, it would be possible to get a credit report through <a href="http://annualcreditreport.com/"><span style="color: #336699;">http://AnnualCreditReport.com</span></a>, but “the vast majority of consumers this age do not have a credit file,” Henson said. They generally receive a simple rejection message from the Web site, which might not be satisfying for a parent who fears their teen-ager’s identity has been stolen. In that case, follow the instructions above.<br />
<strong>When should you check their credit, and what if there's foul play? </strong>Advice for concerned parents on this point is nuanced. Both the FTC and the Identity Theft Resource Center say parents should not check their kids' credit reports on an annual basis. <br />
Both agree that parents should attempt to obtain a credit report on the child's 16th birthday. Ideally, there won't be one yet; but if there is and it's full of errors, there should be ample time to deal with the problem before the child applies for college financial aid or their first loan. For kids under 16, under normal circumstances, an occasional check — perhaps every three or four years — is sufficient, said the FTC's Steven Toporoff.<br />
But if there is a reason to suspect foul play, parents should immediately contact all three credit bureaus and request a report, he said. They also should consider placing a credit freeze on the child's records, following their state's particular policies.<br />
State-by-state rules on applying for credit freezes <a href="http://www.consumersunion.org/campaigns/learn_more/003484indiv.html"><span style="color: #336699;">can be found here</span></a>.<br />
Signs of foul play would include: Surprising offers for credit or other offers mailed to the home, or trouble opening bank accounts for the children. Also, strange identity-related questions when applying for schools or outside activities could be a tipoff. A bank or school might find that there are other identities linked to your child's SSN during a routine check. The bank probably won't tell a parent directly, but often, tellers will hint that there's a problem. <br />
<div class="ad-label">It's important to note that a child's identity could be compromised, even if there is no evidence on a credit report check. One particular kind of identity theft, called SSN-only ID theft, can escape traditional credit reports. Most commonly associated with undocumented workers, a SSN-only thief uses someone else's Social Security number but his or her own name to obtain employment and credit. Records of these imposters often end up in a separate file at the credit bureaus than that of the rightful holder of the SSN, and this file is not disclosed during regular consumer credit checks. If you have reason to believe your child's credit is compromised in this manner, a clean credit report — or no credit report at all — should not be taken as an absolute clean bill of health for the child's identity. <br />
<div class="ad adX1 matched" data="field:AdBreak3;typeName:any;evt:EnterViewport;size:adX1;" jquery151013776013150763416="115">The Identity Theft Resource Center, for free, will assist parents in disputing all erroneous entries on credit reports. <a href="http://www.ftc.gov/bcp/edu/pubs/consumer/credit/cre21.shtm"><span style="color: #336699;">An FTC guide to disputing errors can be found here</span></a>.<br />
The agency will also help parents address the possibility that an imposter is using their child's identity to obtain a driver’s license or escape conviction records or child support payments. <br />
Several for-profit companies also offer to help parents protect their children's identities. AllClearID.com, mentioned in TODAY's story, is temporarily offering a free scan of its database of credit records for signs that a child's identity is compromised. <a href="https://www.allclearid.com/"><span style="color: #336699;">Click here to visit the firm's website</span></a>.<br />
Experian offers a product called <a href="http://www.familysecure.com/"><span style="color: #336699;">FamilySecure,</span></a> priced at $20 a month, which promises to monitor for signs that a child's identity has been compromised.<br />
It’s important to note, however, that none of these commercial products provide foolproof protection against child ID theft.<br />
<br />
Again, please do not take this information lightly, I too wanted to check my childrens credit but I will follow their advice and wait until they are 16. <span style="font-size: large;">If you plan on enjoying the much needed nice weather or do not feel like cooking on a rainy day, here are some recipes for you.</span><br />
<br />
<span style="font-size: large;"><u>Stuffed Peppers: </u></span><span style="font-size: small;">(makes 4 servings)</span><br />
<br />
1lb. extra-lean ground beef<br />
4 large green bell peppers, tops removed, cleaned of seeds and cored, but not cut in half<br />
8 oz. can tomato sauce, divided<br />
15 oz. can spanish rice<br />
1 large onion, chopped<br />
1/2 tspn. salt<br />
1/4 tspn. black pepper<br />
<br />
1. Combine all ingredients, except 1/2 can of tomato sauce.<br />
2. Stuff green peppers full.<br />
3. Place peppers in slow cooker. Pour remaining tomato sauce over peppers.<br />
4. Cover. Cook on high 4 hours.<br />

<span style="font-size: large;"><u>Barbecued Pork Chops:</u></span><span style="font-size: small;"> (Makes 6 servings)</span><br />
<br />
4 loin pork chops, 3/4" thick, trimmed of fat<br />
1 cup ketchup<br />
1 cup hot water<br />
2 Tbsp. vinegar<br />
1 Tbsp. Worcestershire sauce<br />
2 tsp. brown sugar<br />
1/2 tsp. black pepper<br />
1/2 tsp. chili powder<br />
1/2 tsp. paprika<br />
<br />
1. Place pork chops in slow cooker.<br />
2. Combine remaining ingredients. Pour over chops.<br />
3. Cover. Cook on high 5-6 hours.<br />
4. Cut chops in half and serve.<br />

<strong>Of course we do not like to lie to our children but in everyday life sometimes you have to tell them a little "white lie" to get through the day or situation.</strong><br />

1. We were at a restaurant that one of my girls did <u>not</u> want to go to, she decided since she was there and did not want to be she was not going to like anything she ate. I ordered her a pizza and she was determined not to eat the pizza, so I decided to tell her the waitress got her a pizza from her favorite pizza place and her eyes lit up! She ate almost half of the pizza and was so excited the waitress did this for her.<br />
<br />
2. The girls and I have a routine on how to pick what restaurant to go to, they take turns on which one to go to (yes I know my husband thinks I am crazy too). We were passing one of my daughters favorite restaurants and we were scheduled to be somewhere and we did not have time to go to that particular restaurant. So of course I told her it is too full and they have no more room for us. From now on if we do not want to go to a particular restaurant or the girls are fighting over where to go, we just tell them it is too full and we cannot get in. It usually works!<br />
<br />
3. The girls and I were playing outside and it started to get dark and I told them we needed to go inside. Of course I heard "noooo mommy we want to stay outside and play!" So I told them" If we do not go inside the animals will not be able to come out and eat their dinner because they will be too scared." They asked "the animals come out at night to eat?" I said "Yes so we better hurry up and get inside so they can eat their dinner, I am sure they are very hungry." They seemed very concerned about the animals and came inside. The last episode we watched was about how cell phones can cause issues with your health.
